Christmas Cookie Recipe Swap

Miniature Peanut Butter Treats

Kerri (Latte' Buddies!)

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 cup creamy peanut butter
1/2 tsp vanilla
1 1/4 cup flour
1/2 tsp salt
3/4 tsp baking soda
36 miniature peanut butter cups, unwrapped
Combine butter, sugars, egg, peanut butter and vanilla in mixing bowl. Beat until smooth. Add flour, soda and salt. Roll into small balls (walnut size) and place in miniature muffin pans. Make an indention with thumb in each cookie. Bake for 8-9 minutes at 375 degrees. Remove from oven. Immediately place 1 peanut butter cup in each. Cool in pan for 10 minutes. Gently twist to remove from pan. Cool on rack. Makes 36 cookies
